Year-in, year-out, Domaine Paul Pillot makes small amounts of very good Bourgogne Blanc and Rouge from sites within Chassagne and from Chagny and Remigny, on the edge of the Chassagne-Montrachet AC. In 2009, an exceptional year, the Pillots have really outdone themselves. The wines soar above their classification. The Chardonnay is deliciously punchy, very textural and has plenty of chalky minerality. The Pinot is bright, tangy, full of cherry fruit with the Chassagne personality really shining through. Both wines receive much the same kid-glove treatment as Pillot’s Chassagne cuveés: impeccable work in the vineyard (20-35 year old vines), hand-picking, extended maturation on lees, and judicious use of oak. Both are bottled under Stelvin. In short, these are very fairly priced examples of Burgundy that you can buy with total confidence.
