Domaine Bernard Defaix Petit Chablis 2010
Screwcap. The Domaine farms just 1.5ha of Petit Chablis and this is the first Defaix wine to be released with each vintage. While most Petit Chablis comes from the low lying sites on Portlandian limestone to the north of Chablis, the Defaix wine comes from organic vines with their roots on the classic Kimmeridgian soils. While it has all the essential qualities of a young fresh wine, it could quite easily pass for AC Chablis. We loved the look of Defaix's 2010s when we visited last year; they have a richness and density of fruit allied to laser-like precision. This Petit Chablis is a great introduction to 2010. We will ship the other wines from this vintage later this year. This wine is aged on its fine lees for eight months and elevage takes place entirely in glass-lined steel tanks to preserve the freshness and typicity of the wine. Unusually for a wine of this level, there is discernable mineral spine supporting the refined, chalky, ripe fruit. "This is already wonderfully expressive with ripe orchard fruit and sea breeze-inflected aromas leading to rich, pure and delicious flavors that possess fine mid-palate concentration as well as a refreshing finish.
